
Imagine if you could walk to your freezer right now and pull out a bag of already made meatballs. What would you make? The possibilities abound. Spaghetti with meatballs, meatball subs, Swedish meatballs, lasagna with meatballs, and that's just to name a few. So, do your future self a favor and stock up these yummy meatballs. Or you could make them now and eat them now, that works too.
Make Ahead (Or Right Now) Meatballs
1 1/2 pounds ground beef (or combo of beef and ground sausage)
2 eggs
1/2 cup grated Parmesan cheese
1 cup seasoned breadcrumbs
1/2 cup milk
1/2 onion, finely chopped
1/2 teaspoon Italian seasoning
2 cloves garlic
1 teaspoon salt
Fresh ground black pepper, to taste
Preheat oven to 375 degrees F.
Combine all ingredients in a large bowl until well mixed.
Using a cooking scoop or spoon, shape approximately 28 golf ball-sized meatballs and place in a 9x13-inch baking pan.
Bake for 30-35 minutes or until cooked through.
Remove from oven. Use immediately or prepare the meatballs for freezing by moving them to a parchment lined cookie sheet. Place in a single layer and without touching. Place in freezer for 1-2 hours or until frozen. Store frozen meatballs in a zippered bag with most of the air removed. Make sure to write the "made on" date on the bag. Store in freezer for no longer than 6 months.
