Sloppy Joes

Sloppy Joes from Dishin' with Dixie



I'm not opposed to popping open a can of Manwich at the end of a long day, in fact I've done it a lot over the years.  Guess what though, sometimes Mom forgets to buy Manwich.  Fear not.  Sloppy Joes are super easy to make with things you likely have in your fridge right now.

Sloppy Joes

1 pound ground beef, cooked and excess fat drained
1/4 cup onion, chopped
1/4 cup bacon bits (optional)
1/4 cup dill pickle, diced (optional)
1/2 cup ketchup (or to taste)
1/4 cup yellow mustard (or to taste)
S & P, to taste

Saute cooked beef, onion, bacon and pickle until onion is softened.  Stir in ketchup, mustard, salt and pepper.  Heat through.  Taste test; if too sweet add a little more mustard, if too tangy add a little more ketchup.  If not saucy enough add a little more of both ketchup and mustard until desired consistency is reached.

I like to make a smiley face with the ketchup and mustard.  For some reason I started doing this way, way back in my early 20s and it just stuck.  And it works.  I add just the right amount of each every time.

Serve hot on hamburger or hoagie buns.  Even toasted bread will do in a pinch.  We like ours with tater tots.

My 14 year old swears she doesn't like Sloppy Joes, but she likes these.  'Nuff said ;)
