Christmas Crack

We entertained this weekend so I had a great excuse to make some treats.  I tried two new recipes, Christmas Crack and Peppermint Oreo Truffles.  This recipe was inspired by Praline Crack from Cookies and Cups.  I modified it slightly because nothing goes better with toffee than chocolate.  Since not everyone likes nuts I only put them on half the batch but truthfully the pieces with pecans were my favorite.

Side note: The crack mentioned here is short for crackers, not the highly addictive and illegal drug.  Please don't be offended by the name.  While these crackers are very tasty and slightly addictive real addiction is nothing to joke about.

Christmas Crack

1 package plus of graham cracker, broken into squares (enough to fill the pan)
1 cup butter (not margarine)
1 cup brown sugar
1 teaspoon vanilla
1/2 teaspoon salt
1/2 - 3/4 cup chopped pecans
1/2 bag semi-sweet chocolate chips
Sprinkles, if desired

Preheat oven to 350 degrees F.

Line a 10 x 15-inch jelly roll pan foil.  Butter the foil evenly.

Fill the pan with a single layer of graham cracker squares.  May need to break into smaller pieces to fill the gaps. Set aside.

In a saucepan over medium heat, melt butter and brown sugar.  Stir frequently and bring to a boil.  Once a rolling boil is achieved continue to boil and stir for two minutes.  If a bit of the butter isn't quite worked into the sugar it's okay.  It will all come together in the oven.

Pour hot toffee evenly over the graham crackers.  Make sure crackers are in a single layer.  Place pan in oven and bake for 10-12 minutes.  For crispier toffee leave in a few additional minutes.

Remove from oven and immediately sprinkle with chocolate chips.  Let set for a minute or two to melt.  Using an off-sided spatula spread the melted chocolate to cover the entire top of the toffee.

Apply the topping of your choice, pecans or sprinkles, evenly on top of the melted chocolate.

Let cool completely.  I stuck mine in the freezer due to a time crunch.

Break or cut into pieces or squares.

Store in an airtight container in the refrigerator or freezer.
